As a mom, I like making a fuss over holidays no matter how big or small. And while St. Patrick’s Day may be one of the smaller holidays, it’s still fun to make something green, sweet and delicious whether it’s just for your family, the kids at school or a special party. We’ve shared a lot of St. Patrick’s Day Dessert ideas and this is another special one that’s simple and easy to make!

Cookie Bar Ingredients

All of the detailed ingredient amounts are below in the recipe, but you’ll need all the cookie making basics:

  • Butter
  • Sugar (brown sugar and white sugar)
  • Egg
  • Vanilla
  • Baking Soda and Baking Powder
  • Salt
  • Flour
  • Chocolate Chips
  • Green M&Ms (sort them out yourself or grab a bag with only green M&Ms – or grab this special St. Patrick’s Day M&M Mix)

St. Patrick’s Day Cookie Bar Directions

You’ll begin by preheating your oven and lining your cookie sheet with parchment paper (or you can grease it really good with butter if you’d prefer. I personally like the ease of cleanup that comes with parchment paper.).

Next, you’ll begin mixing your ingredients together, starting with the butter, sugar, egg and vanilla. In a separate bowl, mix together your dry ingredients and then slowly add it to the butter mixture. Once combined, fold in the chocolate chips and green M&Ms. Super easy, right?

The final step is to spread your cookie mixture across your cookie sheet, pressing the dough into place. You can even add some extra green M&Ms across the top to add some additional color.

You’ll bake it until it’s lightly brown on top and then let it cool before cutting it into small bars. All that’s left is to serve it up on St. Patrick’s Day and enjoy!

  • 1/2 cup unsalted sweet cream butter softened
  • 1/2 cup light brown sugar packed
  • 1/2 cup sugar
  • 1 large egg

  • 1/2 tsp baking powder
  • 1/2 tsp Salt
  • 1 1/2 cups Flour
  • 3/4 cup chocolate chips
  • 3/4 cup

Instructions

  1. Preheat the oven to 350 degrees and line a 10x15 cookie sheet or baking dish with parchment paper.

  2. Using a standing mixer, cream together the butter, brown sugar, sugar, egg and vanilla until combined.

  3. In another large bowl, whisk together the flour, baking soda, baking powder and salt until combined.

  4. Gradually add in the dry ingredients to the butter mixture until combined.

  5. Fold in the M&M’s and chocolate chips by hand.

  6. Spread out the dough onto your cookie sheet, pressing it down into the dish.

  7. Add a few extra green M&M’s to the top of cookie mixture for some added green for St. Patrick's Day.

  8. Bake in the oven for 20-25 minutes or until lightly brown.

  9. Remove the cookie sheet and allow it to cool completely before cutting it into bars. Enjoy!
